Life may be just a bowl of cherries, but we wouldn’t want to overlook this bottle of cherries in our search for rich cherry sweetness. Clear Creek’s cherry liqueur starts with their very own Kirschwasser, also known as “Cherry Water,” a fruit brandy made by crushing, fermenting and distilling cherries into a delicate eau de vie. Whole ripe cherries (grown in Oregon’s bountiful Columbia River Gorge orchards) are then given a nice long soak (skins, pits and all!) in the Kirschwasser, where they add even more cherry goodness to the bottle. The cherries flavor the brandy – not in an overly sweet maraschino style, but in a velvety, sweet-tart, how-did-they-make-it-taste-so-much-like-actual-cherries style. And here’s how they do it. Clear Creek Distillery produces their brandy in traditional copper pot stills, in an “Old World” brandy tradition, creating eau de vies that are more like boozy fruit essences than anything else. By doubling the cherry – first distilling cherries into brandy, then macerating whole fruit in that brandy – they’ve created a very cherry masterpiece. Tip of the Tongue With hints of vanilla and almond, Clear Creek’s Cherry Liqueur is a brilliant way to refresh a classic Manhattan or class up a Singapore Sling. And we’ve been known to add a splash to pies, fruit cobblers and clafoutis for an extra cherry boost.
