Mezcal is traditionally unaged. But this one takes a cue from reposado or “rested” tequilas to mellow the smoky layers and impart barrel notes similar to whiskey or bourbon. Made from agave that’s steam-roasted in low-pressure brick ovens and co-fermented with both the agave sugars and crushed piña fibers to showcase Highland Oaxacan terroir, it’s then double-distilled in ceramic pots and aged in American white oak. This 100% agave mezcal’s a real sipper for those who want the usual bouquet of floral, citrus, and herbal notes with the added flavors of vanilla, caramel and baking spice from the barrel. TIP OF THE TONGUE Sip this one neat like a fine whiskey. (Cigar is optional.) Or try it in a Mezcal Old Fashioned: Combine 3 oz of reposado mezcal, a bar spoon of agave syrup, and 2 to 3 dashes of Hella Bitter Aromatic Bitters in a cocktail glass with ice. Stir until blended and well chilled. Garnish with an orange peel.
