The Chardonnay grapes behind this bright, citrusy, pale-yellow sparkling white are grown in conditions that are just as ideal as in the famous Champagne region of France – super high elevations, chalky soil, lots of sun during the day but enough cool time at night. The siblings behind this wine are transplants from Champagne, too. Laurent and Nathalie Gruet inherited their father’s passion for sparkling wine, but carried the torch to new frontiers in Albuquerque. Nathalie’s son, Sofian, grew up on the winery and is now assistant winemaker, helping his uncle Laurent with every step of the process. Blanc de Blanc means “white from white” and is the name for sparkling wines made from 100% Chardonnay. And this one follows the traditional méthode Champenoise, which means that it undergoes a second fermentation in the bottle to produce natural carbonation. Sauvage actually ages in the bottle for two years to pick up a bit more yeasty flavor, which supports the green apple, grapefruit and lemon notes. tip of the tongue The vintners say this wine’s bright acidity makes it excellent for pairing with oysters or cream sauce. We think its bone-dry, vivid carbonation is a no-brainer for funky, gooey cheeses.
