It takes over 60 pounds of fresh apples to produce one of these bottles of Applejack! First, Harvest Spirits makes hard cider, which they use in both their applejack and their vodka. That hard cider is distilled twice, then aged for two years in bourbon barrels to make this apple-licious brandy. The final product has a rich apple flavor that makes a great cocktail, but it also has a lot of vanilla and oak flavors similar to a fine aged bourbon. Cornelius is the fancy version of a traditional spirit made more for swillin’ than sipping! But one of our favorite things about the indie spirits boom is that distillers are making amazing versions of spirits that were traditionally pretty rough. tip of the tongue This is a really fun spirit to pair with dessert. It goes well with a wide range of flavors, from an apple pie or crumble to chocolate cake to a berry bread pudding.
