One sip of Riesling and we called Germany to cancel our dinner reservations. Why pay airfare when you can get this invigoratingly vibrant, irresistibly juicy and buoyant wine from Oregon? It has the plumpness, mouthfeel and notes of a sweet Riesling, but enough acid that you get amazing tart (and slightly briny) notes of lemon rind. This wine spans both the dry and sweet Riesling worlds, but to call it a hybrid doesn’t do it justice. Ransom Spirits was started by Tad Seestedt in 1997 with his life savings and a bunch of credit cards. The name is a nod to the great debt he took on to follow his dream! He began producing small amounts of brandy, both aged an un-aged, then started wine in 1999. He doesn’t have set rules when it comes to making wine, but says that decisions are based on “taste, the other four senses, a small degree of common sense, instinct and, of course, what the grapes themselves want to do.” Pass the corkscrew, please. TIP OF THE TONGUE This juicy, slightly salty wine pairs perfectly with nutty, melt-worthy Alpine-style cheeses like Everton or Prescott. Here’s a tip: Melt some and serve with roast potatoes for an easy-peasy fondue.
