One sip and it was clear we were dealing with one of the most elegant Cabs to cross our tasting table. It’s velvety-soft on the palate, leaning into a weighty roundness that’s balanced by a light acidity and oak. Medium-bodied with aromas of cola, fig, tobacco, vanilla and malted chocolate – it’s so smooth it complimented our smile (it had certainly given us one) then started crooning Chet Baker. Resolute is located in the northwest Mayacamas Mountains in California. The appellation is comprised of dozens of volcanic mountains ranging from 1, 350 to 2, 600 feet, which means the soil of the vineyards is of volcanic origin. It’s brilliantly red in color and rich in black obsidian, quartz crystals and volcanic gravel, which makes for a great natural filtration system and some seriously delicious wines. Now there’s a geography lesson we’ll remember. TIP OF THE TONGUE Who says you have to save fancy wine for fancy food? This Cab cries out to be served alongside a grilled cheese made bacon and Balsamic Four Onion Spread (on a white tablecloth and with your finest china, of course).
