Elegant, flavorful, balanced – if those are appealing adjectives to you, we suggest that you give this red wine a try. Winemaker Robert Sinskey produces a range of wonderful bottles, but we are most excited by his POV (point of view) series, a particularly personal wine released each year. The 2013, the most recent year available, is a blend of classic Bordeaux varietals: Merlot, Cab Franc, and Cab Sauvignon from Sinskey’s certified-organic, sustainable and biodynamic vineyard in Carnernos. It’s a rich wine with aromas of red berries and dried violet and a subtle cinnamon spice, followed by flavors of tart mulberry and dark chocolate, with plenty of ripe, firm tannins for staying power both on the palate and in the cellar. tip of the tongue We recommend decanting this style of wine an hour or two before you’re going to serve it. If you don’t have a decanter, just use any clean, dry glass pitcher, measuring cup or vase that will expose more of the wine to air (and hopefully won’t make it too hard to pour the wine later!).
